Anaerobic digestion has several digester designs for dairy cattle manure that include: covered lagoons, complete-mix, plug-flow and fixed-film digesters (Wilkie, ). In covered lagoon and fixed. Dairy manure has low BOD/VS values (around 25%), whereas swine and poultry manure show higher values.

On the basis of volatile-solids percentage and the BOD/VS values of dairy manure, as little as 20 percent of the total solids may be available for conversion in the digester. Much of the fermentation used industrially to produce food and drink products, as well as home fermentation, uses anaerobic digestion. most anaerobic digesters are operated as single stage mesophilic reactors. Table 2 (p. 3) provides typical design criteria for high rate mesophilic digesters.
